Aubergine Roulades with Mackerel Fillets

Ingredients for 4 servings:

12 slices of aubergine
1 X jar of CALLIPO MACKEREL FILLETS in olive oil
400g chicory
60g grated parmesan
Tomato sauce (t.t.)
Extra virgin olive oil
Garlic, salt and pepper (t.t.)

 
 

Method:

Salt the pre-sliced aubergine, cover in flour and fry. Lay out on some blotting paper. In the meantime, parboil the chicory and then sauté with garlic, salt and pepper.
Arrange a piece of chicory and the Callipo Mackerel Fillets onto each slice of aubergine, roll up the slices, add a bit of the tomato sauce and grated parmesan and cook au gratin in the oven for a couple of minutes.
