Rice Patty with Salmon Fillets in Olive Oil

Ingredients for 4 servings:

180g black rice
1 x 120g can of Callipo Salmon Fillets in olive oil
Half a spring onion
100g parmesan cheese
1 organic lemon
100ml olive oil
80ml white wine
60g butter
Vegetable broth (t.t.)
Salt and pepper (t.t.)

 
 

Method:

Chop up the spring onion and transfer to a small pan with the olive oil. Mix in the black rice to coat, fry lightly, add the white wine and reduce. Add the vegetable broth and continue cooking.
When it is cooked, add the parmesan, salt and pepper. Mould the rice into 4 patties. Serve with the Salmon Fillets in olive oil.
