Tuna, Pumpkin and Goat Cheese Strudel

Ingredients for 4 servings:

1 x 420g jar of CALLIPO TUNA FILLETS
200g yellow pumpkin
300g soft goat cheese
200g yellow and red peppers
Extra virgin olive oil (t.t.)
Salt and pepper (t.t.)



Slice the vegetables lengthwise, sprinkle on some salt and leave them to rest for a couple of minutes. Coat the pumpkin slices with flour and fry in extra virgin olive oil. Roast the peppers in the oven for around 20 minutes and season with salt, pepper and a bit of oil. Prepare your dish by arranging the pumpkin slices on some baking paper, spread on the goat cheese and add the CALLIPO TUNA FILLETS. Roll it all up and dish out the strudel on a bed of red and yellow peppers.
